Hello, my darlings. Today I wanted to share with you a quick and easy lunch idea. And this is also a healthy lunch that you can make under 30 minutes. For this recipe, I used one red pepper, one yellow pepper, red onion, carrot, spinach tortilla, sweet potatoes, salt, white pepper, and mixed of seasonings.
I started by chopping my veggies in small stripes and added red onion. I cook it for about 10 to 15 minutes. I added a bit of water in so it doesn’t burn, and season it with salt, pepper, garlic, and mixed of seasonings. While that cooks, I peeled one sweet potato and chopped it in small cubes. And put it in my air fryer, and added one tbs of oil, seasoned it with garlic, pepper, and salt. I cooked the sweet potatoes for about 15 minutes on 200 degrees.
When veggies were done, I heated up my tortilla in the microwave for 20 seconds and stuffed it with veggies, and added a bit of cheese, and greek yogurt. And serve it with sweet potatoes. And this was so delicious, and healthy, and so filling.
